If you’re a fan of salads and blood oranges, this is one salad you won’t soon forget!
- Optional: Add some olives
- Optional: Add some sunflower seeds
- Optional: Add some dried cranberries
- 1 tablespoon of vinegar
- 6 blood oranges
- Half a cup of pine nuts
- 3 teaspoons of mustard. Dijon mustard is recommended.
- half a cup of blood orange juice
- half a cup of olive oil
- half a cup of canola oil
- 6 ounces of Arugula
- Optional: follow your heart vegan gourmet cheese
Preheat your oven to about 330 degrees.
Spread the pine nuts on some kind of surface and put them in the oven until they become yellow. This usually takes around 5 to 10 minutes. Nuts burn pretty quickly, so pay attention.
Now pick up a jar and put the vinegar, the mustard, the blood orange juice, the salt and all the oils in it and shake it.
Put the arugula in a bowl and toss with sufficient dressing to coat leaves, then split it into six plates.
Afterwards, peel and slice the blood oranges.
Now divide the pine nuts and the blood orange slices into each plate. Then drizzle everything with the contents of your jar.
Optional: Turn your cheese into crumbled cheese and split it among the plates.
Serve and enjoy!
